Preheat the oven to 425°F. Place a baking sheet or pizza stone, if you have one, in the oven while it's preheating.
Place one tortilla on a piece of parchment paper. Spread ¼ cup of the pizza sauce evenly over the tortilla. Sprinkle ¼ cup of the mozzarella cheese over the pizza sauce. Season with ¼ teaspoon of the oregano.
Place the second tortilla on top and repeat with the remaining pizza sauce, leaving a small border around the edge for the crust, then add the remaining cheese and the remaining oregano.
Add the sliced olives, sliced mushrooms and red pepper flakes, or your desired pizza toppings, on top of the cheese.
Carefully transfer the assembled tortilla pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for about 5-7 minutes or until the tortilla edge is crisp, and the cheese is melted and bubbly. Use a pizza cutter to slice the pizza into 4 or 6 slices and enjoy immediately.

Storage: Store any leftovers in an airtight container in the fridge for up to 3-4 days, although it is best enjoyed immediately after making. Reheat in the oven or toaster oven at 350°F for 5 minutes.
