Ingredients

  • 1 cup whole wheat pastry flour
  • 2 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 over-ripe mashed bananas
  • 1/3 cup honey
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup Greek yogurt
  • Toppings optional: Coco-nut butter & cacao nibs

Instructions

  • Preheat the oven to 350F degrees.
  • Mix the dry ingredients in a bowl.
  • Mix the wet ingredients in another bowl making sure there are no clumps.
  • Combine dry & wet ingredients well.
  • Scrape into a greased loaf pan.
  • Bake at preheated oven for 1 hour or until toothpick inserted in center comes out clean

Notes

  • This recipe must use only "over ripe" bananas that are mashed to serve as an optimal fat substitute. Using anything other than truly over ripe fruit won't yield the same consistency. So, be sure you set aside three bananas and allow them to develop a few brown spots and lines before you whip up this dessert.
  • Bake the bread in a pre-heated oven for the best results.
  • Be sure to grease your loaf pan or line with parchment paper for easy removal.
