Pizza quinoa bites are a vegetarian protein-packed snack/appetizer that you can feel good about - made with quinoa, cheese and your favorite pizza toppings
Preheat oven to 350° F. Lightly coat 12 mini muffin cups with nonstick cooking spray.
In a large bowl, combine all ingredients. Divide quinoa mixture between prepared muffin cups.
Bake for 20 to 25 minutes or until golden brown. Serve with pizza sauce.

Recipe: This recipe is adapted from Better Homes & Garden Storage: Store any leftovers in an airtight container. They will last about 3-4 days in the fridge. To reheat, just place them in microwave or toaster oven.Freezing Instructions: You can also freeze the pizza quinoa bites for up to 3 months. I would recommend freezing them after cooked though. To re-heat, thaw in the fridge overnight and bake in a 350°F oven for a few minutes until crispy.Make Ahead Tips: I strongly suggest cooking the quinoa in advance. That way it's cooked and cooled and ready to be tossed into the other ingredients. This is a great recipe for leftover quinoa.Substitutes: For best results, follow the recipe as is.
