For the batter

Instructions

  • Preheat oven to 350℉.
  • In a 9x13 baking dish, combine the peaches, sugar, cornstarch, lemon juice, cinnamon, and salt. Stir until the cornstarch dissolves, and set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a liquid measuring cup, whisk together the milk, egg, and vanilla extract. Pour the milk mixture into the dry ingredients and stir until smooth.
  • Pour the batter on top of the peaches in the baking dish. Add the cubed butter on top of the batter.
  • Bake for 35–40 minutes until golden brown and bubbly. Allow to cool for about 10 minutes, then serve warm with a scoop of vanilla ice cream, if desired.

Notes

My Top Tip: Don't rush the resting time. The filling is very liquid right out of the oven and thickens as it cools. Give it at least 10 minutes before serving.
Storage: Cover the baking dish tightly with foil or store the peach cobbler in an airtight container in the fridge. It'll last for 3–5 days, but will taste best in the first 2–3. Reheat in the oven at 350ºF for 10–20 minutes until warmed through and re-crisped.
Freezing: Wrap the cooled peach cobbler tightly in plastic wrap and then foil, and place it in a freezer-safe bag. It'll last in the freezer for 3–6 months. Thaw in the fridge overnight, then reheat in the oven at 350ºF for 10–20 minutes until warmed through and re-crisped.
