Easy Apple Crisp with oats is a simple fall dessert with apples, cinnamon, crunchy oat streusel topping, and vanilla ice cream.

Preheat oven to 375°F. Grease an 8-inch square baking dish or a 7-inch x 11-inch baking dish.
Place the apples into the greased baking dish. Add the sugar, lemon juice, and cinnamon on top, stir, and set aside.
In a small bowl, combine the oats, flour, brown sugar, pecans, cinnamon, and salt. Cut in the butter using a fork or your hands until the mixture resembles coarse crumbs. Sprinkle the crisp topping mixture over the apple mixture.
Bake until the crisp topping is golden brown and the filling is bubbly, about 35–40 minutes. Allow to cool for a few minutes. Serve warm with a scoop of ice cream, if desired.
My Top Tip: Cut the apples evenly. Large pieces take longer to soften, so keep the chunks similar in size. Check a piece near the center with a small knife before taking the dish out of the oven.
Storage: Once cooled, cover the apple crisp with plastic wrap or aluminum foil and store it in the fridge for 4–5 days. Reheat individual slices in the oven at 350ºF for about 10 minutes. The microwave works too, but the topping will stay crispier in the oven.
Freezing: Once cooled, place the apple crumble in a freezer-safe container or wrap it tightly with aluminum foil and then a layer of plastic wrap. It will keep well in the freezer for up to 3 months. Thaw in the fridge overnight and reheat.
