Servings: 8 servings
- 1 cup cottage cheese
- 1 cup freshly shredded cheddar cheese plus more for serving
- 1 tablespoon taco seasoning
- Chopped tomatoes for serving
- Chopped cilantro for serving
Add the cottage cheese to a blender or food processor and blend until completely smooth.
Pour the blended cottage cheese into a small saucepan. Add the shredded cheddar and taco seasoning.
Warm over medium-low heat, whisking continuously, for about 5 minutes, or until the cheese melts and the mixture is smooth and creamy. Turn off the heat as soon as everything is melted. If the queso isn't smooth enough, return it to the food processor and blend one more time for a smoother, creamier consistency.
- My Top Tip: Blend again after heating. It'll make the queso extra smooth and creamy. Just be careful, it's not too hot when you put it in the blender.
- Storage: Store the cottage cheese queso in an airtight container in the fridge for up to 5 days. Reheat in the microwave in 30-second bursts, stirring between each burst so it warms evenly and so the edges don't burn.
