  • Grease a 12-ounce microwave safe mug.
  • In a small bowl or glass measuring cup, combine all the dry ingredients except for the chocolate chips. Whisk to evenly distribute and break up any lumps.
  • Add in the almond milk, coconut oil, and vanilla extract. Whisk until smooth. Stir in the chocolate chips and pour the mixture into the prepared mug.
  • Cook in the microwave on full power for 75-90 seconds. Allow to sit for at least 5 minutes before enjoying.

Storage: This mug cake is best enjoyed immediately out of the microwave, but in the case you have leftovers or want to save one for later. Wrapping it tightly with plastic wrap is ideal to maintain it’s freshness and moisture. When wrapped and stored properly a mug cake will last up to 3 days in the fridge. To reheat, simply place the mug back into the microwave for a few seconds until warmed through. The exact time will vary depending on your microwave and if your mug cake was refrigerated or frozen.
Freezing: Yes, you can freeze a mug cake. Once the cake is cooled, wrap the mug tightly in plastic wrap and then foil then place it in the freezer. Freeze for up to 1 month. Thaw before reheating.
