BBQ Chicken Sandwich Recipe

Easy shredded BBQ chicken sandwich with homemade coleslaw on a brioche bun. Use pre-shredded chicken or rotisserie chicken, which takes 15 minutes to prep and serve!

Ingredients

For the Chicken:

For the Slaw:

  • 1 lime juiced
  • 1 tablespoons Greek yogurt
  • 3 cups coleslaw mix
  • ¼ cup chopped cilantro
  • ½ jalapeño minced (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For Assembly:

  • 4 Brioche buns toasted
  • sliced dill pickles optional

Instructions

  • Make the chicken: In a large saucepan, combine the shredded chicken and BBQ sauce. Cook over medium-low heat, stirring often, until the chicken is well coated in the sauce and warmed through, about 5 minutes. Remove from the heat.
  • Make the slaw: Add the coleslaw mix, cilantro, jalapeño, Greek yogurt, lime juice, salt, and pepper to a large bowl. Toss until well combined.
  • To assemble, add about a heaping ½ cup of chicken to the bottom of each brioche bun. Top with a heaping pile of slaw and pickles, if desired. Add the top bun and serve warm.

Notes

Storage: Store the BBQ shredded chicken and the coleslaw in separate airtight containers in the fridge. The BBQ shredded chicken will last up to 4 days, and the coleslaw will last up to 2 days before it starts losing its crunchy texture.
