BBQ Chicken Sandwich Recipe
Easy shredded BBQ chicken sandwich with homemade coleslaw on a brioche bun. Use pre-shredded chicken or rotisserie chicken, which takes 15 minutes to prep and serve!

Servings: 4 sandwiches
For the Slaw:
- 1 lime juiced
- 1 tablespoons Greek yogurt
- 3 cups coleslaw mix
- ¼ cup chopped cilantro
- ½ jalapeño minced (optional)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For Assembly:
- 4 Brioche buns toasted
- sliced dill pickles optional
Make the chicken: In a large saucepan, combine the shredded chicken and BBQ sauce. Cook over medium-low heat, stirring often, until the chicken is well coated in the sauce and warmed through, about 5 minutes. Remove from the heat.
Make the slaw: Add the coleslaw mix, cilantro, jalapeño, Greek yogurt, lime juice, salt, and pepper to a large bowl. Toss until well combined.
To assemble, add about a heaping ½ cup of chicken to the bottom of each brioche bun. Top with a heaping pile of slaw and pickles, if desired. Add the top bun and serve warm.

Storage: Store the BBQ shredded chicken and the coleslaw in separate airtight containers in the fridge. The BBQ shredded chicken will last up to 4 days, and the coleslaw will last up to 2 days before it starts losing its crunchy texture.
