Make the crema. In a food processor, combine all ingredients until creamy. Season to taste with salt and pepper. Set aside in the fridge until ready to serve.
Make the burgers. In a large bowl, mash the avocado. Add beef, salt and pepper and mix until combined. Form into 4-5 patties, about 1/2 inch thick.
Preheat a grill or cast iron pan to medium high heat. Add oil and cook the burgers until seared and golden brown, 4 minutes per side. Transfer to a platter and serve with a bun, reserved avocado crema, and desired toppings.
Notes
Storage: Store the patties in an airtight container for up to 4 days. Reheat on the stovetop until warmed through.Freezing Instructions: You can freeze the burgers before cooking by placing them on a baking sheet in the freezer.
