Total Time1 hour hr
Servings: 9 servings
- ½ loaf French bread about ½ lb
- 2 cups apple diced with skin on (about 1 large apple)
- ½ cup walnuts coarsely chopped
- 4 large eggs
- 2 cups milk
- ½ cup honey
- 1 orange zested
- ¼ teaspoon ground cardamom
- ¼ teaspoon cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon salt
- Vanilla ice cream for serving
- Caramel sauce for serving
Grease a 7x11" or 9x9" or 8x8" baking pan.
Cut bread into ¾" thick cubes and place in the baking pan.
In a large bowl, whisk the eggs with the honey until smooth. Add the milk, orange zest, and spices. Whisk until combined.
Pour the custard mixture over the bread, making sure the custard coats each piece. You can also put everything in a blender and blitz it until smooth.
Add the apples and walnuts on top of the bread and press down with a spatula.
Cover with plastic wrap and refrigerate for at least 1 hour or overnight.
Preheat the oven to 350°F.
Remove the plastic wrap and bake the bread pudding until lightly browned on top and all the custard is solid, 35–45 minutes depending on pan depth.
Let it cool for at least 15 minutes before serving. Serve with ice cream or Greek yogurt.
My Top Tip: Give the bread time to soak. The hour in the fridge helps the custard reach the centers of the cubes. Rushing this step can leave dry bread inside the pudding.
Storage: Store the apple bread pudding covered in the fridge for up to 4 days. Reheat in the oven at 350ºF for 10–15 minutes, or in the microwave for 30–60 seconds.
Freezing: Let the bread pudding cool completely, wrap it tightly in plastic, and then again in aluminum foil. It will last in the freezer for up to 1 month. Thaw in the fridge overnight and reheat in the oven at 350ºF for 10–15 minutes.
