Scrub the potatoes under running water and dry with a paper towel.
Use a fork to poke the potatoes all over. Rub with olive oil and sprinkle with salt.
Place the potatoes in the air fryer basket and air fry at 400°F for 40–50 minutes, depending on the size, flipping halfway through. Use a knife to poke the potatoes and check for doneness.
Use a sharp knife to slice the potatoes lengthwise down the center without cutting all the way down. Gently pinch the sides of the potatoes to open. Add toppings of choice and serve.
