Place all the vegetables, olive oil and seasoning together in a large bowl and toss well to combine.
Preheat the air fryer to 375°F. Arrange a single layer of the vegetables in the air fryer basket. Air fry for 10-15 minutes, shaking the air fryer basket once or twice during cooking to ensure even cooking.
Serve immediately with protein of choice.

Storage: Simply add to a container and store in the fridge. Eat within 3-4 days.
