Vegan French Toast Recipe

This Vegan French Toast uses almond milk and flaxseed instead of eggs, with maple syrup, cinnamon, and vanilla for a simple plant-based breakfast.

  • In a large shallow bowl, whisk together the almond milk, ground flaxseed, maple syrup, cinnamon, and vanilla extract. Allow mixture to set and thicken for 10 minutes.
  • Whisk the mixture again. Then, place a slice of bread into the bowl and push the bread into the mixture to make sure the bread is coated for 10–15 seconds.
  • Heat a large griddle on medium heat, spray with cooking oil, and place the drenched bread slice on the pan. Repeat with the remaining slices.
  • Cook the French toast for 3–5 minutes, until golden brown on the bottom. Flip over and cook for another 3-5 minutes, until the other side is golden brown.
  • Serve warm with maple syrup and fresh fruit.

Notes

My Top Tip: Make sure to use tough bread. You'll need it to hold up once you dip it in the batter! This is the case for regular French toast, but it's especially important for vegan French toast (which doesn't have the egg to bind it).
Storage: Store the vegan French toast in an airtight container in the fridge for up to 4 days. Reheat on a baking sheet in the oven at 400ºF for 4–5 minutes per side
Freezing: This vegan French toast freezes very well and lasts up to 3 months. Place the slices on a baking sheet lined with parchment paper and open-air freeze them until solid. Then, wrap them in plastic wrap and freeze them in an airtight, freezer-safe container or heavy-duty freezer bag. Thaw in the fridge or reheat from frozen.
