Preheat the oven to 350°F. Place the butter in a 9x13-inch baking dish and transfer to the oven until melted, 3 to 5 minutes.
In a medium bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt. Add the milk and vanilla extract and whisk until smooth.
Pour the batter evenly over the melted butter. Do not stir.
Sprinkle the pecans evenly over the batter, then sprinkle the brown sugar evenly over the pecans.
Carefully pour the hot water over the top. Do not stir.
Bake for 40 to 45 minutes, or until the top is golden brown and the sauce is bubbling around the edges.
Let cool for 15 minutes before serving. Serve warm with vanilla ice cream, if desired.
My Top Tip: Keep the cobbler layers separate. Once the batter goes over the melted butter, do not stir, even after adding the hot water. This helps the cobbler form a baked top with sauce underneath.
Storage: Store leftover cobbler covered in the fridge for up to 4 days. Reheat individual portions in the microwave in short intervals until warmed through. The topping will soften as it sits.
