Monster Rice Krispie Treat Recipe

Monster Rice Krispies treats are fun to make with puffed rice cereal and marshmallows to form the Rice Krispies treat that is then dipped in chocolate and decorated with candy eyes.

Ingredients

  • 6 tablespoons unsalted butter
  • 40 large marshmallows Jet-Puffed work best
  • 6 cups Rice Krispies cereal
  • 16 ounces chocolate candy melts
  • 32 large and small candy eyeballs

Instructions

  • Line a 9-x-13–inch baking pan with parchment paper. Leave excess on at least two sides so you can easily remove the treats after they set.
  • Add the butter to a large pot and set it over medium heat. Once it melts, the butter will begin to foam. Keep a close eye on it and cook for about 5 minutes more, or until you see brown specks on the bottom of the pot and the mixture smells nutty.
  • Reduce the heat to low and add the marshmallows. Cook, stirring constantly, until the marshmallows melt.
  • Remove the pot from the heat and stir in the cereal, working quickly to make sure everything is well-combined.
  • Scrape the mixture into the prepared pan. Using a nonstick spatula, press the mixture into an even layer. Let it sit for at least 30 minutes.
  • Once set, remove the treats from the pan using the parchment paper as a sling. Cut into 16 equal bars with a sharp knife.
  • Melt the chocolate melts per the package instructions. Place a stick in the middle of each treat, then dip it in the melted chocolate. Shake off any excess chocolate. Press the candy eyes into the treats and let them sit for 10 minutes.

Notes

  • My Top Tip: Keep an eye on the marshmallows while they melt. Stir constantly so they melt evenly, don't get too gooey, and don't stick to the bottom of the pot.
  • Storage: Store the Monster Rice Krispies in an airtight container. If you stack them, put a piece of parchment paper between each layer so they don't stick to each other. The treats will stay fresh at room temperature for up to 5 days, or in the fridge for up to 1 week.
  • Freezing: Wrap the individual Monster Rice Krispies in plastic wrap, then place them in a zip-top freezer bag. They'll last in the freezer for up to 3 months. Thaw at room temperature and enjoy.
