Healthy Rice Krispie Treats

These healthy marshmallow-free Rice Krispie treats use almond butter, honey, and brown rice cereal. They're light, crispy, and so good!

  • Line an 8-inch baking pan with parchment paper, leaving a slight overhang on all 4 sides so you can easily remove the treats once set. Lightly coat the parchment paper with coconut oil.
  • Add almond butter, honey and coconut oil to the bowl of a stand mixer fitted with the whisk attachment. Whip at medium speed for about 3 to 5 minutes, or until the mixture is combined and the coconut oil has melted and started to foam slightly
  • Remove the bowl from the mixer and add the rice cereal to the almond butter mixture. Use your hands to fold the cereal in until it’s evenly coated.
  • Scrape the mixture into the prepared pan, and very gently press into an even layer. Let set in the fridge for 30 minutes or until firm, then cut into 16 even squares.

Notes

My Top Tip: Use your hands to stir in the cereal! Your hands are your best tool for combining the rice cereal with the almond butter mixture to avoid crushing it. You can use a rubber spatula, but it'll be harder to avoid breaking the cereal.
Storage: To store these marshmallow-free puffed rice treats, you can leave them in an air-tight container on the counter at room temperature for up to 5 days, or you can keep them in the refrigerator for up to 7 days.
Freezing: If you want to keep your Rice Krispie treats for even longer, wrap them individually in plastic wrap or parchment paper, and then place them in a freezer-safe container or resealable freezer bag for up to 3 months. When you're ready to eat them, just take them out of the freezer and let them come to room temperature for a few minutes.
