Whole grilled carrots tossed in a little oil and spices, then cooked on the grill for about 10-15 minutes until tender and smoky. Finish off with a squeeze of lemon.
Place the carrots in a large bowl. Add the oil, honey, garlic powder, salt, and pepper and use your hands to toss the carrots.
Heat the gas grill to medium-high (around 400°F). Brush the grill grates lightly with oil to prevent sticking.
Place the carrots directly on the grill. Grill for about 10–15 minutes, turning every few minutes until they are tender and have grill marks without burning.
Remove from the grill and serve with lemon wedges.
Notes
Storage: Kept in an airtight container in the fridge, the carrots will keep for up to 3 days. I recommend reheating them in the microwave for 1-2 minutes.
