Grilled Carrot Recipe

Whole grilled carrots tossed in a little oil and spices, then cooked on the grill for about 10-15 minutes until tender and smoky. Finish off with a squeeze of lemon.

  • Place the carrots in a large bowl. Add the oil, honey, garlic powder, salt, and pepper and use your hands to toss the carrots.
  • Heat the gas grill to medium-high (around 400°F). Brush the grill grates lightly with oil to prevent sticking.
  • Place the carrots directly on the grill. Grill for about 10–15 minutes, turning every few minutes until they are tender and have grill marks without burning.
  • Remove from the grill and serve with lemon wedges.

Notes

Storage: Kept in an airtight container in the fridge, the carrots will keep for up to 3 days. I recommend reheating them in the microwave for 1-2 minutes.
