Total Time40 minutes mins
Servings: 12 muffins
Preheat the oven to 375°F. Line a 12-cup muffin pan with muffin liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, whisk together the sugar and eggs until smooth. Add the Greek yogurt, melted butter, and vanilla and whisk until well combined.
Add the dry ingredients to the wet ingredients and use a spatula to mix just until combined. Fold in the chocolate chips. The batter should be thick and scoopable.
Divide the batter evenly among the muffin cups, filling them almost to the top.
Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Cool in the pan for 5 minutes, then transfer to a wire rack.
My Top Tip: Keep the oven door closed until near the end of baking. Opening the door too early drops the oven temperature and can cause the muffins to sink before they've finished rising.
Storage: I keep the muffins in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
Freezing: Let the muffins cool completely, then wrap them individually and place them in a freezer-safe bag or container for up to 3 months. Thaw frozen muffins at room temperature or warm them in the microwave in short intervals until heated through.
