Apple Pancakes Recipe

Apple pancakes made with grated apple in the batter and a warm cinnamon apple topping. These soft, fluffy pancakes are an easy weekend breakfast.

Ingredients

Pancakes

Apple Topping

  • 2 tablespoons unsalted butter
  • 2 medium apples peeled and diced
  • 2 tablespoons packed brown sugar
  • ½ teaspoon cinnamon
  • Pinch of salt

Instructions

  • In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon and salt.
  • In another larger bowl, whisk the egg until beaten. Whisk in the milk, melted butter and vanilla.
  • Add the dry mixture to the wet mixture and whisk until just combined. Add the grated apples and stir until evenly distributed.
  • Heat a large nonstick pan or griddle over medium heat. Spray with nonstick cooking spray.
  • Scoop a level ⅓ cup of batter for each pancake and cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for 1-2 more minutes, or until golden brown and cooked through. Makes 8 pancakes.
  • While the pancakes cook, make the apple topping. In a small saucepan, melt the butter over medium heat. Add the diced apples, sugar, cinnamon, and salt. Cook for 8-10 minutes, stirring occasionally, until the apples are tender and the mixture is syrupy.
  • Serve the pancakes warm with the apple topping spooned on top.

Notes

My Top Tip: Mix the batter just until combined. A few small lumps are fine! They help keep the apple pancakes light and fluffy.
Storage: Store any leftover apple pancakes and apple topping separately in airtight containers in the refrigerator for up to 4 days. Reheat the pancakes in the microwave, toaster, or a skillet, and warm the topping gently on the stovetop or in the microwave before serving.
Freezing: Freeze the cooled apple pancakes in a freezer-safe bag with parchment between each pancake for up to 3 months. Thaw overnight in the fridge or reheat directly from frozen in the toaster or microwave. The apple topping is best made fresh, but you can also freeze it for up to 2 months.
