  • Place the oats, water, almond milk, cinnamon, salt, and coconut oil, if using, in a 6-quart Instant Pot and stir to combine.
  • Place the lid on and move the valve to sealing. Press pressure cook and set the timer to 4 minutes high pressure. You’ll notice the Instant Pot will start to come to pressure first and then the timer will begin. It can take 8-10 minutes to come to pressure.
  • When the cook time is up, let the pressure release naturally for 10 minutes, then do a quick release for any remaining pressure. Carefully open and remove the lid.
  • Stir the oats and add more water or milk if the mixture looks too thick, keeping in mind that they will continue to thicken as they cool. Serve immediately with your favorite toppings.

Storage: Add leftovers to an airtight container once cooled and store in the fridge. You can enjoy them for up to 5 days.
