GRILLED EGGPLANT PARMESAN

LOW-CARB

Enjoy eggplant parmesan with a lighter take because it’s made without the traditional breading. It’s low carb and easy-to-prepare!

INGREDIENTS

▢ olive oil  ▢ garlic ▢ panko bread crumbs ▢ grated parmesan ▢ eggplant ▢ tomatoes ▢ fresh mozzarella ▢ salt ▢ black pepper ▢ fresh basil

STEP 1

the panko in a skillet in a little oil until golden brown

STEP 2

the eggplant rounds into a hot grill pan

STEP 3

on both sides until browned

STEP 4

the tomatoes on each side

STEP 5

with the tomato and mozzarella and cook until melted, then top with the panko breadcrumbs and a little fresh basil

top

Serve as an appetizer or main meal served with spaghetti!
