EASY CHICKEN NOODLE SOUP

COMFORTING

What’s unique about this chicken noodle soup is that you make your own homemade chicken broth and use vermicelli noodles instead of traditional egg noodles.

STEP 1

place

the scraps from the onions, carrots, and celery in a large stock pot

STEP 2

add

the chicken thighs and bay leaf; season with salt and pepper

STEP 3

add

water; boil; reduce heat and simmer until chicken is fork-tender and cooked

STEP 4

add

the onions, celery and carrots to the pot; season with salt and pepper

STEP 5

cook

with some garlic and oregano until vegetables start to soften

STEP 6

return

the shredded chicken and strained chicken broth to the pot

STEP 7

simmer

and then add the vermicelli pasta and cook until the pasta is al dente
