  • 1 loaf whole wheat bread cut into 2-inch squares (equals about 5-6 cups)
  • 2 eggs lightly beaten
  • 1 1/2 cups almond milk or milk of your choice
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon honey
  • 1/2 tablespoon brown sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon sea salt


  • In a large bowl, whisk eggs, almond milk, applesauce, honey, vanilla and salt.
  • Fold in the cubed bread, making sure it's all coated well.
  • Transfer mixture to an 8x8 baking dish, cover and refrigerate for about 1 hour to allow the bread to soak up the flavors.
  • Preheat oven to 350 F and bake bread pudding for 45 to 50 minutes, until top is golden brown and a toothpick inserted in the center comes out clean.
  • Serve warm with a spoon of vanilla ice cream, or enjoy it cold!
