Ingredients

Steak and Vegetables

  • 1 lb flank steak sliced into 1/2 inch strips
  • 2 small onions thinly sliced as rings
  • 6-8 mini tri-colored pepper thinly sliced as rings
  • Lime wedges
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 ts garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp coriander
  • 3 Tbsp olive oil
  • Tortillas for serving
  • Cilantro for serving
  • Avocado for serving

Chili-Lime Sour Cream

  • 1/2 cup sour cream
  • 1 Tbsp lime juice
  • 1 Tbsp fresh cilantro chopped
  • 1 tsp chili powder
  • 1/2 tsp garlic powder

Instructions

Steak and Vegetables

  • Preheat oven to 400°F.
  • Arrange the steak, onions and peppers on the sheet pan with the steak in the middle.
  • Season the entire sheet pan with ground cumin, chili powder, garlic powder, oregano, coriander, salt and pepper. Drizzle the olive oil over the entire sheet pan. Toss the onions, steak and peppers individually in the spices and olive oil to coat them generously.
  • Cook for 12-15 minutes, or until steak reaches desired doneness.
  • Squeeze the cooked lime wedges over the steak and vegetables. Arrange the steak, vegetables and chili-lime sour cream sauce in a tortilla and top with cilantro and avocado chunks if desired.

Chili-Lime Sour Cream

  • For the Chili-Lime Sour Cream, combine all the ingredients in a small bowl and whisk until well blended.

Notes

You can also broil the sheet pan for 8-10 minutes for faster higher-temp cooking.
You can line the sheet pan with aluminum foil if you’d like to minimize (or eliminate!) the clean-up process.
Flank steak is the preferred cut for this dish.
It's easy to make your own taco seasoning, but you can use store bought if you prefer.
Serve with fresh toppings for a delicious and authentic Mexican meal.
