How to Poach Chicken

Ingredients

  • 1 pound chicken breasts, thighs, or both
  • ½ teaspoon salt
  • ½ yellow onion sliced
  • 4-6 garlic cloves peeled
  • 5 whole black peppercorns
  • 4 parsley sprigs
  • 2 rosemary sprigs
  • 1 bay leaf
  • Chicken stock/broth

Instructions

  • Season chicken lightly with salt.
  • Transfer the chicken to a large pot or dutch oven with a lid. Add the onion, garlic, herbs and spices.
  • Add chicken broth to cover the chicken halfway and bring mixture to a simmer without letting it boil.
  • Simmer for 5 minutes, turn off heat, then cover the pot and let stand for 15 minutes.
  • Remove the chicken from the pot, reserve the broth for another recipe and discard the aromatics.
  • Allow the chicken to rest for a few minutes, then slice and serve.

Notes

Storage: Store in an airtight container for up to 4 days.
Freezing Instructions: Place the cooled chicken into a freezer safe container or bag. It will keep well for up to 3 months.
