This single serving Birthday Mug Cake is the perfect celebration in a cup. Made with basic vegan ingredients, it's cooked in the microwave in only 1 minute!

  • 4 tablespoons flour
  • 3 tablespoons sugar
  • ½ teaspoon baking powder
  • 4 tablespoons almond milk
  • ½ tablespoon grapeseed oil
  • ½ teaspoon vanilla extract
  • Pinch salt
  • 1 tablespoon sprinkles divided


  • Grease a mug large enough to hold double the ingredients (about 12 ounces).
  • Place all the ingredients in the greased mug and only half the sprinkles. Whisk to combine until there are no lumps. Add the remaining half sprinkles on top.
  • Cook in the microwave on high for 1 - 1 1/2 minutes or until the cake is done to your preference.
  • Allow to rest for 5 minutes before enjoying.



Storage: Store any leftovers (if there are any!) in an airtight container. They will last about 3-4 days in the fridge.
