Grilled Tomatoes

Grilled tomatoes are a juicy, smoky, and delicious add-on to any BBQ! The char from the grill elevates the tomatoes making a great side or accompaniment!

Ingredients

  • 4 beefsteak tomatoes cut widthwise (cut along their equators, not pole to pole)
  • 2 tablespoons olive oil plus more for greasing grates
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Chopped parsley for serving

Instructions

  • In a large bowl, whisk together the olive oil, garlic powder, salt and pepper. Add the tomatoes to the bowl and gently toss with the marinade.
  • Preheat grill or grill pan to high heat. Coat grill grates with olive oil.
  • Place tomatoes, cut side down, onto the preheated grill. Grill for 5 minutes with the lid closed, then use a spatula to carefully flip the tomatoes skin side down on the grill and cook with the lid open for 2-3 minutes. Use a spatula to carefully remove the tomatoes off the grill.
  • Serve immediately with fresh parsley, if desired.

Notes

Tip: Make sure your tomatoes are firm - soft tomatoes may fall through the grates and won't hold their shape.
