RITZ Lunar Eclipse Bites

Celebrate the July 2018 U.S. Lunar Eclipse with these adorable RITZ Lunar Eclipse Bites. They are made with crackers, peanut butter, banana and chocolate.

Ingredients

Instructions

  • Cut out a small crescent from a whole RITZ Cracker using a round shaped cookie cutter; repeat so that you have 12 crescent-shaped RITZ Crackers.
  • Heat chocolate chips in a microwave-safe bowl for 1 minute and then stir. Repeat in 30 second intervals until fully melted.
  • Dip each crescent-shaped RITZ Cracker into melted chocolate so that it is completely covered, and place on tray lined with parchment paper.
  • Chill the chocolate covered RITZ Crackers in the freezer or 10 minutes.
  • Spread a dollop of peanut butter on the remaining 12 RITZ Crackers to cover ¾ of the surface, and add a banana slice topped with another small dollop of peanut butter.
  • Place chilled chocolate-covered RITZ Crackers on top of the peanut butter and banana, and enjoy!

Notes

  • Use white chocolate as a substitute for milk chocolate or hazelnut spread as a substitute for peanut butter
  • To make it even faster, drizzle chocolate sauce on top of the completed sandwich instead of dipping it into melted chocolate.
