Hummus Crusted chicken

This easy to prep hummus crusted chicken is great for an easy weeknight meal. Get perfectly juicy every single time!

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Pat chicken breast dry and season with salt and pepper. In a medium bowl, combine the hummus and spices together. Rub the mixture evenly all over the chicken breasts on both sides.
  • Place the hummus covered chicken on the prepared sheet pan and bake for 15-20 minutes or until a thermometer reads 160° F internal temperature. Then broil it for 1-2 minutes, watching it carefully so it doesn't burn.
  • Sprinkle fresh parsley and serve with a side of couscous and veggies, if desired.
