BEST VEGETABLE FRITTATA RECIPE

EASY BRUNCH

Looking for a light brunch recipe that feeds a crowd? This simple vegetable frittata uses up leftover vegetables and is loaded with amazing flavor!

INGREDIENTS

▢ eggs ▢ whole milk yogurt ▢ shredded mozzarella  ▢ red onions ▢ mushrooms ▢ asparagus ▢ cilantro ▢ cherry tomatoes

STEP 1

together the eggs, yogurt, half the cheese and salt & pepper.

STEP 2

the olive oil in a skillet and saute veggies until softened.

heat

STEP 3

over the egg mixture and spread out evenly.

pour

STEP 4

on the cherry tomatoes and the rest of the mozzarella cheese.

sprinkle

STEP 5

until golden brown the eggs are set about 15 minutes....easy breakfast!

bake

Slice into wedges and serve! You've just made one simple vegetarian frittata! Enjoy!
