Shish Tawook is a very popular skewered chicken dish in the Middle East. Think of perfectly tender and juicy chicken that’s been marinating in earthy spices, yogurt, lemon juice and garlic. That’s exactly what you get with my shish tawook recipe. And while the recipe is Middle Eastern, you’d be surprised how approachable the ingredients are.

Although my recipe is Lebanese based on how my parents taught me to make it, the origin of the name is from Turkey. Shish means skewers and tawook means chicken. The Ottoman (Turkish) Empire ruled Lebanon for a while, which explains the Turkish influence on Lebanese food!

How to make shish tawook

This recipe is all about the the marinade! I’ve played around with different options and this combination is by far my favorite!

Essentially the three most important ingredients in the marinade are yogurt, lemon juice and garlic (6 whole garlic cloves!). But I also add tomato paste to give it that rich red color, and some other spices including paprika, cinnamon, oregano and ginger. Mix it all together and you’ll get this orangey creamy color ready for you to coat the chicken with.

Add the large cubes of chicken breast to the marinade and make sure that everything is well coated. While the yogurt and lemon are crucial parts of the flavor of this dish, they also act as a tenderizer for the chicken. That’s what makes the chicken come out so juicy and tender. Let it marinate for at least 4 hours or overnight.

Skewer the chicken right before you’re ready to cook it. I like adding chunks of white onions on each skewer to eat with the sandwich. I love how onions get sweeter when they’re grilled…the perfect vegetable with this shish tawook.

Traditionally, these chicken skewers are meant to be grilled outdoors. You can also use an indoor grill pan or regular pan if you don’t have a grill pan. Either way, you’d be surprised how quickly the shish tawook cooks, all thanks to the yogurt and lemon juice in the base that helped tenderize the chicken!

When it’s cooked, I love making sandwiches with lettuce, pickles and lots of homemade Lebanese garlic sauce. You’ll want to pile on that sauce – it’s dairy-free, rich in flavor and totally takes takes any shish tawook sandwich to another level! In my book, it’s mandatory to eat it with tawook.

Tips for making shish tawook

  1. Marinade the chicken for at least 4 hours, but preferably overnight in the fridge to allow the chicken to tenderize. Trust me, it’ll make the chicken more juicy and flavorful!
  2. Cover the chicken immediately with pita bread after grilling. The pita bread helps trap the vapors and moisture to make the chicken even more juicy! It’s often served this way as well.
  3. Use plain full fat yogurt, and not Greek yogurt. Greek yogurt is fine, but it’s best to use regular yogurt because the water content from the regular yogurt helps to keep the chicken moist.
  4. Soak the bamboo sticks for 30-45 minutes if you’re using. This will prevent them from burning and possibly getting burnt woodchips inside the shish tawook.

Frequently asked questions

How long does grilled chicken keep?

Shish tawook are best served as soon as they are cooked so that they are wonderfully succulent. If you do have leftovers keep them in an airtight container in the fridge for up to 4 days. You can reheat the skewers once, if you reheat it’s best to cover them with foil so that they don’t dry out. I like having the leftovers cold on top of a salad.

Why do you need to marinade the chicken?

Marinating the chicken will not only add flavor, but it also helps to tenderize the chicken and help lock in the moisture when you grill them. Marinate them for at least 4 hours and all you have to is grill them when you are ready to serve.

What do you serve with shish tawook?

I love to serve these as hand held food in a pita with lettuce and garlic sauce and even some freshly made pickled turnips, but you can easily turn these into a larger sit down meal as well. Try serving them with Lebanese Rice, Fattoush Salad or even with Cauliflower Rice.

It’s really hard to mess up this Lebanese Shish Tawook recipe. It comes out moist and flavorful, and makes a great addition to salads, rice, grain bowls or just plain pita bread with garlic sauce.

Instructions

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

Notes

Storage: Store any leftovers in an airtight container. They will last about 3-4 days in the fridge.

Make Ahead: You can make the marinade about 3 days in advance and you can marinate the chicken in the marinade for up to 24 hours in advance.

    1. I haven’t tried this myself, but you could try cooking the chicken (not on skewers) in a 400˚F air fryer for 10 to 12 minutes.

As there may be others out there a little pressed for time, I let the chicken cook in the oven in its marinade (pyrex), without putting on sticks, and it turned out delicious.     1. I have not made this recipe in the Air Fryer, but if I were to make it, I would try it at 370-375, add the kabobs, and cook for 9/10 minutes. Flip and then cook for another 5/6 minutes until the chicken is cooked. Let me know what you think when you make it!

  25. I’m thinking to make these Kabobs for a wedding for 40. I’ve made gazillions of kabobs as they are always a big hit. But I’m leary of the yogurt in the marinade, only because it stick to the grill grates causing an unsightly mess, can you help me, give me some tips how to avoid this ?     1. Sure! I would leave out the yogurt all together then. You can also use this Chicken Kabob recipe that’s very similar but made without yogurt.

    1)Is the recipe referring to greek yogurt or the lebanese yogurt which is more sour?

  31. Excellent recipe. I needed something quick a easy to make and this fit the bill perfectly. I marinated the chicken overnight and skewered them the next day. Fired up the grill outside and cooked them just right and served them wrapped in your yoghurt Flatbread and mixed up some Greek yoghurt with 7 spice, garlic and some salt.         Guess overindulgence is the new form of flattery. After making this second time, we notice the chicken breast soaked up the marinade. Not sure if it was due to us forking the breast before soaking. Nevertheless, flavorful and tender!

  35. This recipe was excellent!! I was having a bunch of people over for a casual hang out kids and adults. I prepped and marinated the chicken, 2 days in advance and everyone went nuts. I was so incredibly delicious everyone was raving! I also made tzatziki with it. The best part was I used spices that I already had in my cabinet,nothing crazy exotic, just simple goodness. I doubled the lemon and halved the cinnamon and used fresh ginger so I reduced that as well. I asked the family, “So add this to the rotation?” And everyone said YES!
    Simple, delicious and not time consuming – I’ll make this again and again!

  36. I made this last night. I halved the recipe because it was only for two adults. I did marinate the chicken for four hours. The result was exceptionally tender chicken. I will leave out the cinnamon next time as I did not like it. I didn’t taste any lemon. I wonder if it makes sense to drizzle some lemon juice on the chicken while it’s grilling.

        I had to marinate the chicken more than 12 hrs, so I haven’t put salt in the marination, otherwise followed everything.

  45. I would love to try this recipe but am dairy/lactose intolerant, any substitutions for the dairy yogurt that would work as well?

    1. You can try a dairy-free yogurt instead of the whole milk yogurt, but I have not tested that in this recipe yet.

  46. Any idea how long I would put this in the over for and what temperature? I don’t have a grill. Can’t wait to make this!!

    1. Unfortunately I haven’t tried this in the oven yet! Maybe 12-14 minutes at 425F? You might need to keep an eye on it.

    2. You could use your ‘broiler’ function, but you’ll have to turn them every 3-4 mins. Another alternative would be to simply ‘sautee’ them loose rather than skewered 🙂

  49. Hello. Thank you so much for sharing this recipe! I was looking for a similar recipe, but couldn’t find any that didn’t have cloves, nutmeg, cinnamon, and/or allspice included. Most people are not aware that these spices can have a bad side effect when mixed certain medications.
    So I was so excited when I read a review stating that Shish Tawook was very similar, just without as many spices. (They even put to look up The Feel Good Foodie)
    I didn’t have skewers, but this came out just terrific using sliced up chicken breast! This is going to be in my weekly rotation from now on. So juicy, so flavorful, and oh so surprisingly easy!

  62. Leave the cinnamon out unless you like cinnamon flavored chicken. Use tomato sauce instead of paste (and more of it) for better flavor and more moisture.

    1. I haven’t tried this with a yogurt substitute yet, but it works with either plain full fat yogurt or Greek yogurt. Greek yogurt is not as good because it doesn’t have the water content from the regular yogurt, which helps to keep the chicken moist.

  86. Well Done! Authentic Lebanese recipe explained in a very professional way; Both in writing and in the video.
    There are as many recipes for the marinade in Lebanon as there are people and restaurants who make the tawook. Yours is a basic and unpretentious one. The addition of tomato paste is not only for color but contributes to deepen the flavor of the end product. It is also very common for places to add sumac, and/or a couple of crumbled bay leaves, and/or some powdered cardamom.
    I recommend this recipe to all who want to make this dish.

  87. STOP WHAT YOU ARE DOING and make this chicken!! I also made a huge batch of her Toum (garlic sauce) I’m telling you guys, this gal doesn’t miss. My husband was craving Zankou Chicken (a super popular Lebanese spot in CA) but after relocating to Austin, TX there wasn’t much in the way of options so I searched high and low and found this recipe. The only change I made was I used chicken thighs instead of breast, as that is what Zankou uses and I also added just a dash of cinnamon and turmeric because I saw it called for in other recipes and we love complex spices in our foods. Honestly, probably would have turned out just as good without it. I let it marinate for 6 hrs. (5 in the fridge, 1 out coming to room temp) I served this chicken with hummus, Toum, tzaziki, tabbouleh, pita and rice. He ate 7 out of the 8 skewers and was kind enough to leave me one.. MAKE THIS RECIPE! You will not be let down. Thank you thank you thank you!!

    I love this marinade and recipe, it makes for delicious and juicy chicken. Due to preference I sub out the tomato paste and oregano, and add turmeric and garlic powder instead.
    Marinating the chicken for hours makes a huge difference. Since I don’t always want to go out and grill, I like to also cook it in a tall pan with butter or oil, turns out great.

        1. Allow me to put in my 2-cents worth. Cook in a 425 oven covered with foil, then uncover and grill for a few minutes to add color and texture. Keep a close eye though during the grilling period.

  96. I took this recipe and decided to use an air fryer instead! I followed the ingredient recipe exactly as stated, except I forgot the paprika! So, I added crush red peppers for a lil flare. After I let the chicken marinate for 12 hours, I poured all 2 pounds of the chicken into the air fryer basket and added a tablespoon of water to ensure juiciness. I then set the timer for 15 minutes at 375°F. After 15 minutes, I flipped the chicken and set the timer for an additional 10 minutes. The chicken was perfectly cooked, seasoned, and juicy!

  101. This was a delicious marinade .. I was out of yoghurt and used buttermilk instead (milk with lemon juice) and used fresh ginger instead of powder. I actually put these in naan and made a wrap! However, the chicken was amazing both ways! It tasted good in the wrap and just by itself. I also recommend having toum with this as well!   109. I have been looking for a flavourful easy recipe for shish tawook, but It always came out dry for me, sometimes bland and sometimes over-seasoned!! By far, hands down, this is the best one ever, I sent some to my neighbours and they loved it, the chicken is super moist, and tender, the spices are just right, and even when I reheated the leftover the next day it was as tender and delicious.. Yumna, thank you, I love your recipes, they are healthy and simple to make, and best of all they are really good.
    note: I didn’t have yogurt so I used butter milk same amount!

    It’s tasty although I don’t necessarily fancy the addition of cinnamon. When you add Toum it taste great, as the Toum overpowers the cinnamon. Thank you very much for both recipies !

          I figured out what I did wrong. I didn’t cook the chicken enough the first time and the marinade didn’t evaporate. That’s why the seconds batch that I cooked longer and I tried the next day tasted better.

          I made a fresh one again and cooked it properly the first time and it tasted great.

  117. Besides yogurt, garlic, lemon, tomato paste, salt, do you feel the other spices can be omitted. There is already so much flavor here

    1. Yes, you can leave out the ginger and oregano. I really like to include paprika and cinnamon if possible or at least one of them.

    2. While simple is often better, in this case the complexity contributed by the various spices is what makes the dish so special. With fewer spices it becomes more Greek than Middle Eastern.
