Ingredients you’ll need to make oven beef stew

  • Beef stew meat: You can buy precut beef stew cubes for this recipe or cut them yourself from a chuck or round roast.
  • Carrots: I like to use regular carrots that are peeled and cut into bite-sized pieces, but you can also use baby carrots because they’re small and require no chopping or peeling if you’re in a hurry.
  • Potatoes: Yukon gold or red potatoes work well in this recipe. Cut the potatoes into bite-sized pieces, so they cook evenly.
  • Green bell peppers: Bell peppers add a touch of sweetness to the stew. Cut the bell pepper into bite-sized pieces.
  • Onions: I like to use yellow onions because they’re sweet and have a milder flavor, but you can also use white or red onions.
  • Garlic: Garlic is a must in this recipe. It adds so much flavor!
  • Middle Eastern spices: I use a combination of 7-Spice (baharat), cumin, paprika, and salt to season this stew. You can find these spices in the spice aisle of your grocery store.
  • Olive oil: Helps roast the beef and the vegetables, making them tender and flavorful.
  • Tomatoes: I like to use canned diced tomatoes because they’re already chopped and ready to go. You can also use crushed tomatoes if you’re not a fan of chunks of tomatoes in your stew.
  • Beef broth: You’ll need beef broth to create the gravy for this stew. I like to use low-sodium beef broth so I can control the amount of salt in the dish.
  • All-purpose flour: A little all-purpose flour goes a long way and helps create a thick gravy.
Ingredients for recipe: baking dish with chopped veggies, stew meat, diced tomatoes, seasonings, olive oil, broth, and flour.

Tips for making A beef casserole in the oven

  1. Cut your veggies into uniform pieces. To make sure everything cooks evenly, it’s important to cut your vegetables into uniform pieces. That means all of the carrots should be the same size, as well as the potatoes, onions, and bell peppers.
  2. Use a large roasting pan or Dutch oven. You’ll need a large enough pan to fit all of the ingredients. I like to use either a roasting pan or a Dutch oven.
  3. Don’t overcrowd the pan. Make sure there’s enough space in the pan so that the beef and vegetables have room to roast and brown. If your pan is too crowded, the beef and veggies will steam instead of roast.
  4. Sear the beef before roasting. To get that nice brown crust on the beef, you can sear it before roasting. Sear the beef in batches so that each piece has enough space in the pan to brown.
  • Add in some more root vegetables. Turnips, parsnips, and sweet potatoes would all be delicious in this recipe.
  • Switch up the protein. If you’re not a fan of beef, you could use lamb or chicken instead.
  • Make it vegetarian. Just leave out the meat, use vegetable broth and double up on the veggies
  • Add in some fresh herbs at the end. I like to add in a handful of chopped fresh parsley or rosemary at the end for some extra flavor.

You can store this stew in the casserole dish that you baked it in or transfer it to a different container. Cover the dish with aluminum foil or plastic wrap and store it in the fridge.

Yes! Follow the recipe as indicated and cook on low for 8 hours or high for 4-5 hours.

  1. Delicious recipe! Perfect seasoning. My beef took longer than 90 minutes to be tender. I will definitely make this recipe again!
All the recipes that I have tried have the perfect amount of seasoning.

    1. Yes, it just might not be as thick. If you want to thicken it up without flour, you could stir in about 1 tablespoons of cornstarch slurry before placing it under the broiler.

    1. Yes, it can be done in an instant pot. You’ll have to brown the beef first, then remove from the Instant Pot, cook the vegetables and then return everything together. Cook at manual high pressure for 30 minutes, then let the pressure release naturally for 15 minutes. But if you’d like I actually have an Instant Pot Beef Stew recipe coming out soon.

  2. just placed this in the oven tonight and can’t wait for tomorrow to try it for dinner. So easy to put together. Will let you know how we like it- ut I can already know it is going to be fabulous.:)

  3. Delicious! Easy, simple, healthy, and SOO GOOD! I seared the meat with garlic and half of the onions….then had the vegetables and other ingredients. Used garlic and herb seasoning instead of the 7 spice because it’s what I had. I added 1 tbsp of Worcestershire sauce to the liquid mix. So good. My mom taught me that the celery leaves create a nice flavor in searing and cooking stews, so I used the leaves of the celery sticks as well. Recipe will be in rotation. Every recipe I have made from here is SPOT ON!! Thank you for creating these for us!!

    1. Aw, thank you so much, Cynthia. It really means a lot to me! Thank you for taking the time to comment and make my recipes!

  4. This is honestly one of the better beef stews I’ve ever had! It’s such an easy go-to meal in the winter, but it’s easy to get sick of the same flavor. This is so flavorful and unique with the spices used and our family absolutely loves it.

  5. My family loved this recipe! I substituted kale for bell pepper, 1 1/2 fresh Roma tomatoes for the 14- ounce can diced tomatoes, and herbs proveance for the 1 tablespoon 7 spice. I used what I had in stock. The rice was a nice touch. I also baked some bread that paired well with the sauce in the stew. Thank you!

  6. Thanks for sharing this recipe – It was yum! Added a green chilli, some parsnip and used Garam Masala instead of 7spice plus smoked paprika.. delicious!

  7. Hello! This is a silly question but how long should the dish be cooked for? I’ve noticed the cook time says 48 mins but the instructions seem to suggest 1.5 hours, what have I missed? 🙂 Many thanks

  8. Absolutely delicious! Baharat is one of my favorite seasonings so this made my mouth very happy!! Thanks for posting! I’m trying it with chicken next!!

  9. I don’t know where I went wrong the cinnamon in this dish from the 7 spice I did not like. And it was all liquid not close to a gravy. I followed step by step.

    1. The cinnamon can be an acquired taste, so feel free to leave it out moving forward! To make it thicker, you can add more all-purpose flour, as it helps create a thicker gravy.

  10. When I saw to make stew in the oven, you had me. I did it and I loved it. The cooking was simple too. After chemo, I don’t like spices but garlic and onion and it was beautiful to me.
    Great work! And thanks Brenda

  11. This is the very first time making Beef Stew! For some reason, it always seemed daunting to get the beef perfectly made but this recipe was so easy. I followed the directions exactly as noted and the beef was so tender and all the flavors from the spices were just so tasty. I’m used to the traditional spices in stew and wasn’t sure if I’d like the Middle Eastern spices but it really worked! At first the taste seemed so different from what I was used to but it was absolutely delicious. I made my own 7 spice blend I’m wondering if I made it correctly. I need to buy it online to really compare the flavor.

    1. I’m so glad you found this recipe easy to make! That’s perfect. Yay! You can also check out my How to Make 7 Spice post for a homemade recipe.

  12. Made this last night for two and have enough for an army!!! We loved it! The spices make it so soooo good!!

  13. Can’t wait to try this. I don’t have any time to make dinner and this sounds super do-able. What can you recommend in place of tablespoon of 7 spice? I have garam masala. We love all the spices but I don’t have 7 spice.

    1. Let me know what you think once you’ve given it a try! I think allspice would be the best substitute for 7 spice. Or you can make your own 7 Spice: mix together 1 tablespoon each of ground black pepper, paprika, ground cumin, ground coriander, ground cloves, ground nutmeg, and ground cinnamon.

  14. I made this today!! It was so tasty and cozy and was perfect for today’s cold and rainy weather! I forgot the flour but it was still good without it!

  15. It looks so delicious, definitely will try it but i have one question.. when to put the flour and broth?? Do i need to make the sauce first and put it over the ingredients and then put it in the oven?? Or combine it all together

    1. Can’t wait for you to try it! You add it in in step 2, so you can just combine all the ingredients together and bake. There is no need to make a sauce first.

    1. Oh, no! That shouldn’t have been the case. Were the meat cubes large? Because that might take a few extra minutes.
