Quick to prep, this one pan chicken and potatoes is a great go-to for a simple family meal. Seasoned chicken thighs and drumsticks are roasted with potatoes and it is totally effortless to make. The chicken comes out perfectly juicy and clean up is a breeze!

Ingredients to make the recipe

  • Chicken: I’m using a mixture of bone-in chicken thighs and drumsticks which make the dish really flavorful and juicy. You can use chicken breast, but the oven time should be reduced and you may need to cut the potatoes smaller to cook quicker.
  • Potatoes: You can use any types of potatoes with this dish. I love throwing in baby potatoes and cutting them in half or quarter to cook evenly.
  • Sauce: The sauce is made up of olive oil, lemon juice, 7 Spice, paprika, salt and pepper. Whisk them well together until emulsified. You can switch out the spices if you’d like.

How to make chicken and potatoes in one pan

  1. Place the chicken in a baking dish large enough for it and the potatoes. Drizzle the sauce on top.
  2. Add the cut potatoes to the baking dish.
  3. Mix everything together with your hands until it’s all well coated with the sauce. Then, bake until the chicken is cooked through and the potatoes are tender.

Tips for making the recipe

  1. Pat the potatoes and chicken dry before adding them to the dish. Removing excess moisture will help everything crisp up, rather than steam, when it roasts.
  2. Use skin on chicken thighs. The skin will not only crisp up, but it will also protect the meat from drying out. My kids are huge fans!
  3. Use your hands to coat the chicken and potatoes in the sauce. This will ensure that everything is well coated and covered with flavor. The oil in the sauce will also help to get those crispy edges.
  4. Let the chicken rest for at least 5 minutes before serving. Resting meats before serving allows the juices to redistribute and each bite will be more tender, flavorful and juicy.

Frequently asked questions

Do you need to marinade the chicken?

I found that I didn’t need to marinate the chicken before cooking it, but you absolutely can if you prefer, or if you want to get ahead of things. Coat the chicken and potatoes in the sauce, then cover it with plastic wrap and place in the fridge. I wouldn’t marinate the chicken for any longer that a couple of hours as the acid in the sauce may start to break down the meat.

What do you serve it with?

I like to serve this one pan chicken and potatoes with a side of steamed veggies. Serve it with any of these:

Roast Carrots

How long does it keep?

These chicken and potatoes are best served as soon as they are made, but leftovers will keep well in the fridge for up to 5 days. Leftover chicken can be served cold with a salad, or everything can be re-heated in the oven at 350°F for 20 minutes or so until warmed through.

Ingredients
  

  • 8 chicken thighs and drumsticks
  • 1 ½ pounds baby potatoes halved
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 6 garlic cloves pressed
  • 1 teaspoon 7 spice
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  • Preheat oven to 400°F. Dry the chicken and potatoes well with a paper towel and place on a 9 x 13 oven-safe rimmed baking dish.
  • In a small bowl, whisk together the olive oil, lemon juice, garlic, 7 Spice, paprika, salt and pepper. Drizzle over the chicken in the pan. Add the potatoes and use your hands to evenly coat the chicken and potatoes with the sauce.
  • Bake uncovered for 55-65 minutes until the potatoes are fork tender and the chicken is cooked through. Broil for 3-5 more minutes if needed for a golden brown color.
  • Allow the chicken to rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

Storage: Store any leftovers in an airtight container. They will last up to 4 days.
Substitutes: For best results, follow the recipe as is. However you can switch out the spices based on your preferences.

    Oh hubby doesn’t like chicken on the bone (crazy), so how can I adjust to boneless on cooking times without drying out? I actually prefer in-bone and with skin, thighs are my fav!!!😋 Tkssss!!!

      You can shave off 10-15 minutes for boneless, skinless chicken thighs. Check it periodically and make sure the internal temperature is 165ºF to ensure it’s completely cooked through!

      Yes, I’m sure you could! I would keep the broccoli in bigger chunks (it’s going to cook quicker than the potatoes if they’re the same size) and you might want to check on it periodically. I think Brussels sprouts would probably do great with this dish!

      Did you pat the potatoes dry before coating them in oil? Drying the excess moisture can help. You can also end your bake with a few minutes of broiling to ensure a golden brown crisp!

      7 spice is made of allspice, ground coriander, cinnamon, black pepper, ground cloves, cumin, and ground nutmeg. You can use any combination of those spices you’d like in the dish!

    Just double checking, for the salt listed, are you using a fine salt or a course salt such as kosher salt? Usually when just salt is mentioned, the standard understanding is fine salt. But I have found that some recipes just forgot to clarify.

    Also, do you ever make something called Halal Cart chicken and rice OR an Afghan dish called Kabuli Palau? (Spellings vary)

      Hi Dalia, I’m so happy you love the recipe!! As for ventilated option, I’m not sure what you mean. I always bake my chicken and potatoes in the oven uncovered for 55-65 minutes, then broil for 3-5 minutes if needed. Please let me know if I can provide any additional help!

        I am pretty sure she mean using the convection option on a convection oven. Convection ovens have a fan that kicks on and off during the baking and roasting time, even if the convection button is not turned on. IF she chooses to turn that button on the fan is on most or all of the cooking time. It can be a great choice for oven ROASTED foods. Browning is more intense. …similar, BUT not quite exactly the same as air frying. I am not 100% sure. BUT I believe her cook time might be less than your recipe states. She would definitely need to keep an eye on it & test the thighs with a meat thermometer.

    This was a great easy recipe! I did doctor it a little. Didn’t have the 7-spice ingredients, so swapped out for lemon pepper seasoning. I also used garlic powder instead of cloves. For the chicken, used 3 thick chicken breasts, which I cubed. I used the baby potatos, but cut them smaller and added baby carrots. Then, I reduced the baking time, 400 degrees for 45 minutes. The flavor was great, but chicken was a bit dry. Next time will only bake for about 35 minutes if using chicken breasts. Other than the dryness, my family loved it!

    The sauce was SENSATIONAL. Nothing altered. I made Yumna’s recipe for seven spice. I was afraid it would be aggressive with so much cinnamon, allspice, nutmeg etc. But the flavors blend magically. DO NOT MESS with this recipe. It is perfect!       Hi Jack, great question!! No, I don’t wash my chicken before cooking because the USDA and FDA advise against it as it can lead to more spread of bacteria. Also, cooking the chicken to the correct internal temperature will remove any bacteria you may be worried about. Hope you enjoy the chicken!

    Ok, another amazing dish that is beyond easy to make and so delicious. This was my first time using a 7 spice mix and I cannot get over the flavor. I used the spice mix recipe embedded in the ingredient list which was very helpful. I didn’t have cloves on hand and it still turned out great. My little ones who are at the age of being picky eaters were even fans so this is a winner in my mind and will now be on repeat in our house! Speaking of my house, it smelled incredible when making this recipe 🙂

    O…M…G!! This dish is absolutely AHHH-MAZING! I have made this recipe 6 times in 3 months (made it tonight, too); once I made 2 batches at the same time so I could share with my co-workers. I also shared your recipe with my family who have all made it. Everyone LOVES it!! I did not deviate from the recipe at all, except that I used all thighs, and I doubled the sauce because the sauce is JUST THAT GOOD!       As the 7 Spice is made up of Allspice, ground coriander, ground cinnamon, ground black pepper, ground cloves, ground cumin, and ground nutmeg, if you have any of these spices, I’d add it.
