VEGAN LEMON BARS

EGG-FREE

Need a fresh Spring dessert? These vegan lemon squares are not only egg-free...they have the perfect oatmeal walnut crust! Creamy AND crunchy!

INGREDIENTS

▢ rolled oats ▢ walnuts ▢ coconut oil  ▢ maple syrup ▢ salt ▢ lemons ▢  sugar ▢ full fat canned coconut milk ▢ cornstarch ▢ turmeric

STEP 1

the oatmeal, walnuts, coconut oil, maple syrup and salt until it comes together.

STEP 2

evenly into a square baking pan lined with parchment paper and bake until golden brown.

STEP 3

the lemon juice, sugar, coconut milk, cornstarch, lemon and turmeric  together in a saucepan until it thickens.

STEP 4

the cooked lemon filling over the crust and spread it out evenly. And...bake!!
