Persimmon Pecan Pumpkin Seed Parfait

This is a recipe whose name you may want to say as fast as you can, several times over, just for the fun of it. However, the Persimmon Pecan Pumpkin Seed Parfait is also going to quickly become a snack you will want to enjoy often, too. The colors and textures alone are going to please you with the tang of yogurt, sweetness of the fruit, and crunch of the seeds and nuts.   • 1 cup Greek yogurt
  • 1 tbsp shredded coconut
  • 1 tsp honey
  • 1 persimmon, chopped
  • 1 tbsp pumpkin seeds
  • 1 tbsp chopped pecans
  • 1 tsp cinnamon


  1. Stir Greek yogurt with shredded coconut and honey.
  2. Layer persimmon, half the pumpkin seeds and pecans, then half the whipped Greek yogurt and half the cinnamon.
  3. Add another layer of the pumpkin seeds and pecans, then remaining Greek Yogurt, cinnamon, and then top with persimmons.
