Easy Quinoa Pumpkin Parfait Snack

During the fall, I find myself with so much leftover pumpkin puree from one baking recipe to another that only uses partial amounts of the pumpkin puree from the can. So, one day I decided to experiment with that pumpkin puree to eat it as is in a parfait form. And so became this Easy Quinoa Pumpkin Parfait Snack. So I sweetened it up in the blender with some chopped dates (you can just use honey or maple syrup, but I wanted to add more substance to it the pumpkin puree), then I added pumpkin pie spices (you can omit if the pumpkin puree you’re using already has the spices) and threw in some pecans into the blender. I did a quick taste test and it was sweet and delicious. I decided to take it one step further and turn it into a parfait recipe with some Greek Yogurt, and some cooked quinoa for a hearty bite. It was definitely one of those “weird” concoctions that I never made again for years, but I remember loving it. So it deserves and a blog post. And what the heck, it deserves a recipe remake!

Ingredients

  • 1 cup Greek Yogurt
  • 1/2 cup pumpkin purée
  • 2-3 chopped dates
  • 1/4 cup quinoa
  • 1/8 tspn vanilla extract
  • 1/2 tspn pumpkin spices
  • 1 tbsp pecans
  • 1/2 tbsp cacao nibs
  • 1/8 tspn cinnamon

Instructions

  1. Cook quinoa with 1/2 cup water, vanilla extract & half pumpkin spices & set aside to cool
  2. Blend pumpkin purée, dates, remaining pumpkin spices & half pecans until mixed well
  3. Layer half the cooked quinoa, pumpkin mixture & Greek yogurt into two bowls or cups, repeat another layer; top with remaining pecans, cacao nibs & cinnamon
