- 1 cup Greek yogurt
- 1 tbsp shredded coconut
- 1 tsp honey
- 1 persimmon, chopped
- 1 tbsp pumpkin seeds
- 1 tbsp chopped pecans
- 1 tsp cinnamon
- Stir Greek yogurt with shredded coconut and honey.
- Layer persimmon, half the pumpkin seeds and pecans, then half the whipped Greek yogurt and half the cinnamon.
- Add another layer of the pumpkin seeds and pecans, then remaining Greek Yogurt, cinnamon, and then top with persimmons.
